Back to Wyoming

We had mixed feelings about returning back to Wyoming. It is hard to leave our spacious home that feels just right for our little family. It made me cry saying good-bye to my sister, my best friend, and my neighbors (whose little girl plans to marry James). But fleeing the intense desert sun was a bit exhilarating. I had stocked up a bit on Trader Joe's goodies since there is nothing other than a plain jane grocer in the little town we reside--and the chocolate macadamia nuts changed from liquid to a solid mass as we drove through the desert and emerge in the Rocky Mountains. The landscape was drenched in a thick green blanket, thanks to unusually high rainfalls this summer. The kids got their second wind--after two long days in the car--and jumped out to run and play! It was sad to leave, but it is nice to be back.

Our Last Night in Tucson

The last night in Tucson was spent in the most amazing way! Meeting up with best friends and family. Attempting to take pictures of four restless boys. A monsoon hit mid photo session, causing us to duck into the nearest store--a toy store!--and the boys were in heaven. As we headed back home, for one last relaxing late night swim and guitar session with our neighbors, this is what we saw.

Pedicure

I decided to skip the much wanted pedicure and treat myself to a new nail polish that I can take back to Wyoming. Our local salon carries a brand called SpaRitual and they have some amazing colors. I picked Revere...an bright orangish gold color, part of their summer collection--mainly because it looked so pretty on their red headed model (not sure it is my best color). The best part is the colors are all vegan and free of dbp, formaldehyde and toluene (which can be inhaled for its intoxicating effect-yuck). How sad, I think my 5 year old is too old to want his nails painted (I may have to go with the orange is a Denver Bronco color argument). But my 2 year old had fun soaking his feet in peppermint water and painting toes with me!

As Seen On TV!


I love to store things under the bed, but it is hard to find the right container to put stuff in! I had a nice long, flat container that stored my maternity clothes between pregnancies (those clothes are now history and I haven't been home in so long, I don't know what is in it now), but my closet has plenty of room for the rest of my clothing, so the other half of my bed is empty. I thought these under the bed storage containers were pretty cool and relatively cheap. I have more shoes than clothes it seems, so this would be a great place to throw off season or special occasion shoes. I also love the idea of storing kids toys this way, but that would never happen!

Rave Review: Kashi Pizza

These pizzas were buy one get one free at our local market, so I decided to give them a try. Yum, the Roasted Vegetable Pizza was so good. Not at all greasy, filling, and flavorful, this pizza made a great dinner and tasted perfectly fine reheated for lunch the next day! Try it today!

The Water, Chocolate and Banana Diet

Okay, not a diet really, but now that spring is (almost) here, I have been thinking a little more about my current diet and eating habits. While I am okay with my current weight, I know that I haven't been feeling great about what I am putting in my mouth, and how I feel. Mentally analyzing my diet (I am sure writing down what I eat for a week would be much more revealing, but also much more time consuming) I have identified three behaviors I would like to change and made a plan to change them!

1. Problem: Water....drink more. I am always thirsty when I go to bed, which is undeniable a sign I should drink more water during the day. And with the abundance of soda around, I have found myself drinking more and more, even though it is not something I really enjoy and not a habit I normally have. Solution: Seltzer water...keep stocked. Mmm, seltzer water is a good alternative to soda and makes me feel like I am having something more special than plain water. Plus, it is more expensive than soda so I find myself savoring it a lot more. I am also keeping my Sigg filled and taking it with me when we hop in the car.

2. Problem: Chocolate...too much. With the abundance of Christmas, Valentine's and Easter candy we have had around, I find myself mindlessly munching on mediocre M&M's all day long. I think the long winter and missing my family in friends has put me in a bit of treat mentality...in other words, I feel like I deserve little treats all day and easily justify consuming junk. Problem is, that cheap candy isn't all that satisfying, so I find myself eating more and more. Solution: Buy chocolate that I love and eat it more mindfully. Again, the speciality dark chocolates (like Green and Black) that I love are much more expensive than a cheap candy bar, but much more satisfying. So I may get treats less often, but they will be much more delicious and special.

3. Problem: Mindless munching of carbs. I normally don't buy chips, pretzels, salty nuts, etc. and having them around is a major triger for me. If I don't fill up at a meal, I use it as an excuse to eat a handful here and there of anything quick and available. But again, I am not really a chip person so I am eating them out of habit and laziness. Solution: Frozen bananas or raw nuts. Mmmm, I have been slicing banans up into chunks and freezing them. That way I can have one or two or the whole banana if I feel like it. They taste almost like ice cream when frozen and leave me more satisfied than chips or pretzels. I have also been making popcorn or grabbing raw, unsalted nuts when I want something salty.

I am going to try these three changes all week and see how I feel. I have some other diet changes I want to make as well, but want a few specific, obvious, and easy things to change and stick with to start!

Yummy Apple Cake...


In the mood for baking something simple and quick this morning, I briefly browsed through the 101 Cookbook blog. One of the first recipes I found was for Unfussy Apple Cake. A bit unseasonable, but we had a big bag of sweet, red apples on the counter that need eaten up. And I find fruit gets eaten up quickest in dessert form. This recipe is really not very sweet, almost a cross between a quick bread and a cake. And it is somewhat healthy using minimal fat and whole wheat flour. The only thing I changed was to use a little plain yogurt and agave nectar as my sweetener (I didn't have Muscavado sugar). I think you could easily change up the fruit or add your favorite nuts or spices. Check out 101 Cookbooks for this recipe, her recent carrot cake post, and so many more nutritious, wonderful meals!
